Description
The scientific monograph is dedicated to the process of developing a sustainable product. The book shows how, using a science-based approach, it is possible to create a sustainable and industry-relevant product – single-cell protein for aquaculture feed. The book analyses the full development process – from the selection of resources and microorganisms, substrate evaluation and fermentation solutions to process optimisation, scaling and final product evaluation. The monograph includes the evaluation of technological solutions, economic analysis, life cycle analysis, risk management and legal aspects. At the end of the book, the authors offer a structured guide, “From idea to product”, which summarises general recommendations for implementing an idea in practice.
